Carrot Halwa Recipe | Gajar Ka Halwa Recipe | How to make Carrot Halwa

Carrot Halwa is one of the popular Indian dessert made using grated carrot and milk.

Ingredients

  • Grated carrot 2 ½ cup tightly packed
  • Milk 2 ½ cup
  • Sugar ½ cup + 1 tbsp
  • Ghee 1-2 tbsp
  • Cashews 2-3 tbsp finely chopped
  • Cardamom powder 1 tsp

Instructions

  • Heat ghee in a kadai.
  • Add chopped cashews to it and fry it till golden.
  • Remove it in a plate and keep it aside.
  • Add the grated carrot in the same kadai and saute for 3-4 minutes.
  • Then add the milk to carrot.
  • Allow the carrots to cook in milk and reduce. Keep stirring in intervals.
  • Once the milk is reduced and carrots are cooked, add the sugar and cook till it all moisture evaporates.
  • Finally add roasted cashews and cardamom powder.
  • Switch off the flame and mix.
  • Serve Gajar ka halwa hot or chilled with ice cream

Notes

Adjust sugar according to your preference. We can adjust the quantity of milk too. Usually I add it in 1:1 ratio with carrot.
Can add almonds, raisins, pista or any nuts of your choice.
It can be made in pressure cooker too.
