Carrot Soup Recipe | Creamy Carrot Soup

Carrot soup is simple, healthy and quick soup made by blending carrot.

Ingredients

  • Carrot 3
  • Onion 1 small
  • Butter 1 tbsp
  • Garlic 4
  • Ginger 1 tsp chopped
  • Water 1 ¼ cup
  • Salt as required
  • Pepper powder ½ tsp or as required.

Instructions

  • Wash and chop the carrots
  • Heat butter in pressure cooker
  • Add finely chopped onions, garlic and ginger
  • Saute nicely for 2-3 minutes and add the chopped carrots.
  • Saute the carrots for 5 minutes and then add ½ cup of water
  • Pressure cook for 2-3 whistles.
  • Once pressure releases open and allow it to cool down and transfer to mixer.
  • Grind to smooth paste.
  • Transfer to the pan adding ¾ cup of water.
  • Add salt and pepper powder as required, boil and switch off the flame.
  • Delicious and creamy carrot soup is ready.

Notes

Soup will be creamy without adding any corn flour.
You can add some bread croutons and serve
Adjust the pepper powder as per your taste.
You can add some cream if you prefer.
