Chicken Majestic Recipe | Andhra Chicken starter recipe

Ingredients

  • Chicken 800 grams
  • Mint leaves ½ cup finely chopped
  • Garlic 8 cloves
  • Green chillies 5 slit
  • Turmeric powder ¼ tsp
  • Red chilli powder 1 ½ tsp
  • Coriander powder ½ tsp
  • Cumin powder ¼ tsp
  • Garam masala ½ tsp
  • Soya sauce 2 tsp
  • Curd ½ cup
  • Coriander leaves to garnish
  • Lemon juice 2 tsp
  • Oil 1 tbsp
  • Salt as required

First Marination

  • Buttermilk 2 cup
  • Salt ½ tsp

Second Marination

  • Egg 1
  • Corn flour 3 tbsp
  • Salt ½ tsp
  • Red chilli powder 1 tsp
  • Turmeric powder ¼ tsp
  • Ginger garlic paste 4 tsp

Instructions

  • Cut the chicken as thin strips, wash them and keep it ready.
  • Marinate the chicken with salt and buttermilk for 3-4 hours. After marination keep the chicken in fridge
  • After 4-5 hours remove the chicken from buttermilk and add all the ingredients under second marination.
  • Mix and keep it aside for 2 hours or marinate overnight for best results.
  • Shallow fry marinated chicken in pan. You can deep fry the chicken in oil too. I felt shallow frying was enough and chicken was tender and juicy.
  • Finely chop the garlic, mint leaves and slit green chillies
  • Heat 1 tbsp oil in a kadai
  • Add finely chopped garlic and slit green chillies and saute for few mins till it is little browned.
  • Then add chopped mint leaves and saute nicely till it shrinks
  • Then add curd, spice powders and salt and mix nicely.
  • Allow it to boil for few minutes.
  • Then add the fried chicken, soya sauce and saute nicely till it is combined.
  • Switch off the flame and garnish with coriander leaves and lime juice.
  • Serve chicken majestic hot

Notes

You can reduce the marination time according to your availability. More time it is marinated chicken will be very juicy and tender.
Adjust the spice powders. I always have it as mild spice so kids can also eat.
Original recipe asked to deep fry the chicken. But I felt if you marinate for longer shallow frying is enough.
