Chicken majestic is one of the popular dry spicy chicken recipe from Andhra. I never know about this recipe. When I was browsing and looking to try something new with chicken came across this famous recipe. Always recipes from Andhra catches my eye. I adapted the recipe from vahrehvah.
Soaking in buttermilk makes the chicken so soft and tender. Addition of curd and mint leaves add nice flavor to the dish. Addition of soya sauce adds Indochinese touch to the dish. I already made it two times after trying for first time. You can deep or shallow fry the chicken. I always prefer shallow fry as it consumes less oil. It can be good starter recipe for guests/ parties.

Chicken Majestic Recipe | Andhra Chicken starter recipe
Ingredients
- Chicken 800 grams
- Mint leaves 1/2 cup finely chopped
- Garlic 8 cloves
- Green chillies 5 slit
- Turmeric powder 1/4 tsp
- Red chilli powder 1 1/2 tsp
- Coriander powder 1/2 tsp
- Cumin powder 1/4 tsp
- Garam masala 1/2 tsp
- Soya sauce 2 tsp
- Curd 1/2 cup
- Coriander leaves to garnish
- Lemon juice 2 tsp
- Oil 1 tbsp
- Salt as required
First Marination
- Buttermilk 2 cup
- Salt 1/2 tsp
Second Marination
- Egg 1
- Corn flour 3 tbsp
- Salt 1/2 tsp
- Red chilli powder 1 tsp
- Turmeric powder 1/4 tsp
- Ginger garlic paste 4 tsp
Instructions
- Cut the chicken as thin strips, wash them and keep it ready.
- Marinate the chicken with salt and buttermilk for 3-4 hours. After marination keep the chicken in fridge
- After 4-5 hours remove the chicken from buttermilk and add all the ingredients under second marination.
- Mix and keep it aside for 2 hours or marinate overnight for best results.
- Shallow fry marinated chicken in pan. You can deep fry the chicken in oil too. I felt shallow frying was enough and chicken was tender and juicy.
- Finely chop the garlic, mint leaves and slit green chillies
- Heat 1 tbsp oil in a kadai
- Add finely chopped garlic and slit green chillies and saute for few mins till it is little browned.
- Then add chopped mint leaves and saute nicely till it shrinks
- Then add curd, spice powders and salt and mix nicely.
- Allow it to boil for few minutes.
- Then add the fried chicken, soya sauce and saute nicely till it is combined.
- Switch off the flame and garnish with coriander leaves and lime juice.
- Serve chicken majestic hot

How to make chicken majestic with step by step pictures
