Coconut Milk Rice Recipe | Thengai Paal Sadam | Srilankan Yellow rice

Coconut milk rice is delicious, tasty, simple and easy to prepare rice made using fresh coconut milk

Ingredients

  • Basmati Rice 1 cup
  • Coconut Milk 1 ½ cup extrated from ½ coconut.
  • Oil 1 tbsp
  • Cinnamon small stick
  • Cloves 2
  • Bay leaf 1
  • Onion 1
  • [[Ginger garlic paste][https://www.namscorner.com/ginger-garlic-paste-recipe-homemade-ginger-garlic-paste/]] 1.5 tsp
  • Green chilli 1 medium
  • Turmeric powder ½ tsp
  • Garam masala ½ tsp
  • Salt as required.

Instructions

  • Soak rice for 20-30 minutes.
  • Take half of the coconut, scrape them as pieces and grind in mixer adding water.
  • Extract the coconut milk and keep it ready.
  • Take ginger garlic paste and green chilli in mixer.
  • Grind them coarsely
  • Heat oil and temper with cinnamon and cloves
  • Add the finely chopped onions and green chilli, ginger garlic paste and saute nicely.
  • Then add turmeric powder, garam masala and salt.
  • Then add the extracted coconut milk.
  • Once it boils, add the washed rice and pressure cook for 1 whistle in medium flame and 5 minutes in low flame.
  • Once the pressure releases open the cooker and gently mix it.
  • Delicious yellow rice is ready.

Notes

I add ginger garlic paste so used it. You can add 5-6 garlic and small piece of ginger if you don't have the paste.
You can use half water and half coconut milk too. I like to add full coconut milk to make it rich.
You can add some veggies too.
