Coconut Milk Rice Recipe | Thengai Paal Sadam | Srilankan Yellow rice recipe with step by step pictures and instructions. Coconut milk rice is delicious, tasty, simple and easy to prepare rice made using fresh coconut milk. You can pair it with any gravy or simple fry. It is commonly called as manja(yellow) rice in Srilanka and one of the most common dishes. They add pandan leaves(rampa) which makes it more aromatic. I add normal bay leaf while making it.

It is quick and easy to make and takes less than 30 minutes. Only time consuming process is extracting coconut milk. I recommend using only fresh coconut milk for this recipe. You can add some veggies too. But we always make it plain without any vegetables. You can pack it for lunch box along with some stir fry. Let’s see how to make coconut milk rice in srilankan style.

Ingredients

  • Basmati Rice 1 cup
  • Coconut Milk 1 1/2 cup extrated from 1/2 coconut.
  • Oil 1 tbsp
  • Cinnamon small stick
  • Cloves 2
  • Bay leaf 1
  • Onion 1
  • [[Ginger garlic paste][https://www.namscorner.com/ginger-garlic-paste-recipe-homemade-ginger-garlic-paste/]] 1.5 tsp
  • Green chilli 1 medium
  • Turmeric powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Salt as required.

Instructions

  1. Soak rice for 20-30 minutes.
  2. Take half of the coconut, scrape them as pieces and grind in mixer adding water.
  3. Extract the coconut milk and keep it ready.
  4. Take ginger garlic paste and green chilli in mixer.
  5. Grind them coarsely
  6. Heat oil and temper with cinnamon and cloves
  7. Add the finely chopped onions and green chilli, ginger garlic paste and saute nicely.
  8. Then add turmeric powder, garam masala and salt.
  9. Then add the extracted coconut milk.
  10. Once it boils, add the washed rice and pressure cook for 1 whistle in medium flame and 5 minutes in low flame.
  11. Once the pressure releases open the cooker and gently mix it.
  12. Delicious yellow rice is ready.

Notes

I add ginger garlic paste so used it. You can add 5-6 garlic and small piece of ginger if you don't have the paste.

You can use half water and half coconut milk too. I like to add full coconut milk to make it rich.

You can add some veggies too.

How to make Coconut Milk Rice with step by step pictures
