Coriander Pesto Pasta Recipe | Coriander mint Pasta | Green pasta

Coriander pesto pasta is the Indian version of classic Italian pesto made with coriander and mint

Ingredients

  • Pasta 150 grams
  • Coriander leaves ½ cup tightly packed
  • Mint leaves ¼ cup
  • Roasted peanuts 2 tbsp
  • Olive oil 2 tbsp
  • Salt as required
  • Italian seasoning 2 tsp
  • Red chilli flakes ½ tsp
  • Pepper powder ½ tsp
  • Cheese ¼ cup optional

Instructions

  • Boil water in a vessel
  • Once it boils add the pasta, 1 tsp oil and salt
  • Allow it to cook for 8-10 minutes till it is done.
  • Drain the water and keep it aside
  • Clean, wash and take coriander, mint leaves in a mixer
  • Add peanuts, garlic to it.
  • Grind to a paste adding little water.
  • Heat olive oil in a Kadai
  • Add the coriander, mint paste to it.
  • Add salt, pepper powder, red chilli flakes and italian seasoning to it.
  • Allow it to boil for 3-4 minutes and then add grated cheese to it.
  • Mix and allow it to cook for 1 minute. Now pesto sauce is ready.
  • Add the cooked pasta to it.
  • Saute in high flame till pasta is nicely coated with green sauce.
  • Coriander mint pesto pasta is ready.

Notes

You can boil and add any veggies, egg or meat of your choice.
You can use type of pasta for the recipe
Adjust the seasoning according to your choice.
You can use walnuts, almonds or cashews instead of peanuts.
You can use any type of oil but olive oil gives nice flavor.
