Cranberry cookies recipe

Cranberry cookies are variation of butter cookies with the goodness of cranberries.

Ingredients

  • All purpose flour/maida 1 cup
  • Corn flour 2 tbsp
  • Butter 100 grams
  • Powdered sugar ½ cup
  • Vanilla essence 1 tsp
  • Salt a pinch
  • Chopped cranberry ½ cup
  • Milk 1 tsp or as required optional

Instructions

  • Take maida, corn flour and salt in a bowl
  • Mix it nicely and keep it ready.
  • Take butter in a bowl
  • Add sugar to it
  • Mix butter and sugar to form a creamy texture.
  • Add vanilla essence to it.
  • Add the dry ingredients to the creamy butter sugar mixture and fold together.
  • Mix and form dough. Add milk and form dough. I didn't use any milk.
  • Now add the chopped cranberries and mix together.
  • Line the baking tray with parchment paper
  • Take small ball and flatten them and arrange in baking tray
  • Preheat the oven at 160°C and bake in the same temperature for 18-20 minutes till the sides brown.
  • Serve the yummy cranberry cookies for tea.

Notes

Baking time can vary between different oven and thickness of cookies. So always keep an eye after 15 minutes.
Cookies always looks soft while taking out and later becomes firm
If the mixture is dry, add few drops of milk to form a dough. If it is sticky you can 1 tbsp flour extra and form dough.
You can add nuts too if you like along with cranberries.
Adding corn flour gives crispy cookies.
You can use wheat flour instead of maida.
