Cranberry cookies recipe with step by step pictures and instructions. Cranberry cookies is variation of butter cookies with the goodness of cranberries. These cookies will melt in mouth and so crispy and crunchy. You will see a lot of cranberries in UK in all super markets. I got a packet of cranberries long back to use for some baking. As usual didn't use them till I was clearing some stocks while coming back from UK. I made these cranberry cookies for my daughter school Christmas party and used the remaining in Christmas Fruit Cake.
Cranberries can be used for making juice, desserts, jam, sauce and has a lot of health benefits too. These cookies are simple with extra addition of corn flour. Nowadays I love the addition of corn flour to the cookies. It gives so crunchy and melt in mouth texture to cookies. You can pack these cookies and give as gifts when you visit your friends or relatives.

Cranberry cookies recipe
Ingredients
- All purpose flour/maida 1 cup
- Corn flour 2 tbsp
- Butter 100 grams
- Powdered sugar 1/2 cup
- Vanilla essence 1 tsp
- Salt a pinch
- Chopped cranberry 1/2 cup
- Milk 1 tsp or as required optional
Instructions
- Take maida, corn flour and salt in a bowl
- Mix it nicely and keep it ready.
- Take butter in a bowl
- Add sugar to it
- Mix butter and sugar to form a creamy texture.
- Add vanilla essence to it.
- Add the dry ingredients to the creamy butter sugar mixture and fold together.
- Mix and form dough. Add milk and form dough. I didn't use any milk.
- Now add the chopped cranberries and mix together.
- Line the baking tray with parchment paper
- Take small ball and flatten them and arrange in baking tray
- Preheat the oven at 160°C and bake in the same temperature for 18-20 minutes till the sides brown.
- Serve the yummy cranberry cookies for tea.
