I am not big fan of fruit cakes. But really like the plum cakes we get during Christmas. This is my first Christmas after I started blogging and since I am in UK Christmas is more special. I thought I should try fruit cakes and got the mixed dry fruits in November itself. Here we get the mixed fruits in packets. You can get them individually, chop and use them too.
I bookmarked this recipe from Bharath sir blog. It contains lot of healthy baking recipes. This is instant fruit cake without soaking the fruits. Choice of mixed fruit and nuts is your choice. I have given some examples of fruits and nuts you can use in notes. Quantity of dried fruits is also your choice. I used only dry fruits. You can use nuts to make it more rich and delicious. Caramel gives nice flavor and color to the cake.

Eggless Wheat Christmas fruit cake
Ingredients
- Wheat flour 1 ½ cup
- Brown Sugar ¾ cup
- Cocoa powder 1 tbsp
- Cinnamon powder ½ tsp
- Cardamom powder ¼ tsp
- Baking powder 1 tsp
- Oil ½ cup
- Water ¼ cup
- Milk 200 ml
- Vanilla essence 1 tbsp
- Mixed dry fruits 1 cup
- Salt a pinch
Caramel
- Sugar 2 ½ tbsp
- Water ¼ cup
Instructions
- Take sugar for making caramel in pan
- Allow it to melt in low to medium flame
- It will melt, caramelize and change to brown in colour
- Switch off the flame and now add ¼ cup water and mix. Be careful while adding water. If it crystallize you can melt in low flame. Allow it to cool down.
- Sieve wheat flour, cocoa powder, baking powder, salt, cinnamon powder and cardamom powder 5-6 times and keep it aside.
- Take milk, sugar, oil, water, vanilla essence and caramel in a bowl.
- Mix it nicely till everything is combined and sugar is dissolved.
- Now add the flour in batches and fold together.
- Now add the mixed dry fruits and mix.
- Grease the baking tin with butter and dust it with flour.
- Fill the tin with batter to ¾th and tap the pan to release air.
- Preheat the oven to 150°c for ten minutes and bake it the same temperature for 40-45 minutes toll toothpick inserted comes out clean.
- Cool them in wire rack and remove the cake from tin.
- Enjoy the yummy fruit cake.
