Cashew Cookies | Cashew butter biscuits recipe with step by step pictures. Cashew cookies is the adaptation of butter cookies with addition of cashew powder. You can increase the amount of cashews in this recipe or add almond or pistas too. Addition of cashews adds rich taste to the cookies. I used wheat flour to make these cookies. You can use maida too.
This is one of simple cookies and adds lot of nutritional value. You can give these cookies to kids who don't like to have nuts. You can also try my Bourbon Biscuits or Wheat Biscuits.
Cashew Cookies | Butter cashew biscuits
Ingredients
- Maida/wheat flour ¾ cup
- Cashews ¼ cup powdered
- Butter ⅓ cup or 50 gms
- Powdered Sugar ⅓ cup
- Salt a pinch
- Vanilla essence 1 tsp
- Milk 1 tbsp or as needed
- Cashews few for decorating
Instructions
- Powder the cashews and keep it ready. I powdered it finely since my daughter doesn't like it coming in her mouth while eating. You can coarsely powder it too
- Take flour, powdered sugar, powdered cashews, pinch of salt in a bowl and mix nicely.
- To the mixture add butter and vanilla essence and mix nicely with hands.
- It will be like crumble texture and now add few drops of milk to form dough. I used 1 tbsp of milk to form a dough. Add 1 tsp at a time and knead.
- Make small balls and flatten them in your hands or Roll them between baking sheet in desired thickness and cut them in shapes as you like. We can roll them as log and refrigerate and cut them into pieces too. Add finely chopped cashews on top.
- Line the baking tray with parchment paper and arrange the cookies
- Preheat the oven to 180°C for 10 minutes. Bake in the same temperature for 12-15 minutes.
- Cool them in wire rack and serve.
Notes
You can add almonds or pista powdered too.
