Egg kothu chapati is delicious and quick snack or dinner recipe made with leftover chapati.

Ingredients
Chapati 3
Egg 2
Onion 1.big
Tomato 1 medium
Green chilli 1-2
Salna ¼ cup or as required
Ginger garlic paste 1 tbsp
Turmeric powder ¼ tsp
Red chilli powder 1 tsp
Garam masala ½ tsp
Curry leaves few
Coriander leaves 2 tbsp finely chopped
Oil 1 tbsp
Salt as required
Instructions
Heat oil and add finely chopped onions and green chillies
Saute it for 2 minutes and add ginger garlic paste
Saute them till raw smell goes
Then add tomatoes and saute them till mushy.
Now move the mixture to one side and crack the eggs.
Scramble them and add turmeric powder, red chilli powder and garam masala
Then add the chopped chapati and mix.
Finally add the salna and saute in high flame for 4-5 minutes.
Garnish with finely chopped curry leaves and coriander leaves.
Serve egg kothu chapati hot with curd or
raita
.
Notes
You can use any leftover curry if you don't have salna.
Skip eggs and add vegetables to make veg kothu chapati
