Foxtail Millet Porridge Recipe | Millet Porridge using Coconut Milk

Millet porridge with foxtail millet, moong dal and coconut milk

Ingredients

  • Foxtail Millet ½ cup
  • Moong dal 2 tbsp
  • Salt as required
  • Water 2 cups
  • Grated coconut ¾ cup

Instructions

  • Dry roast moong dal in a pan till aromatic and slightly brown.
  • Add millet to it and wash them.
  • Then take in pressure cooker and add water and salt.
  • Pressure cook for 1 whistle in medium and 10 minutes in low flame or 3-4 whistles whichever is earlier.
  • Take grated coconut in mixer and grind by adding water.
  • Extract the coconut milk from it.
  • Once pressure release open the cooker and slightly mash the porridge.
  • Add coconut milk to it and allow it to boil.
  • Switch off the flame when it just comes to boil. Don't over cook after adding coconut milk.
  • Healthy millet porridge is ready.

Notes

You can use any millets for the recipe
You can skip moong dal and use only millets.
Coconut Milk makes it so rich and tasty so don't skip it.
You can use store bought coconut milk of 1 cup if you are not extracting fresh coconut milk.
You can add some crushed garlic to the porridge
