Dry roast oats till it slightly browns.
Roast seeds for few seconds till it crackle. I used flax seeds and melon seeds.
Then roast nuts in the same pan.
In the same pan add butter, jaggery and water.
Allow it to boil till jaggery melts and it bubbles up for 3-4 minutes.
Switch off the flame and add the honey, salt and vanilla essence.
Now add the roasted oats, seeds and nuts and mix.
Line the baking tray with parchment paper or foil.
Transfer the mixture to the tray.
Level them and keep in fridge for 30 mins.
After 30 minutes transfer to plate and cut them as bars.
Store in air tight container and enjoy anytime.
