Instant Mango Pickle recipe | Quick Mango Pickle Recipe

Instant mango pickle is quick and easy pickle prepared using raw mangoes

Ingredients

  • Raw Mango 1 or 1 cup heaped
  • Salt ¾ tsp
  • Turmeric powder ½ tsp
  • Red chilli powder ¾ tsp
  • Gingely/sesame oil 1-2 tbsp
  • Mustard 1 tsp
  • Curry leaves few
  • Hing ¼ tsp
  • Roast and grind
  • Fenugreek 1 tsp
  • Red chillies 2

Instructions

  • Chop the mangoes and keep it ready
  • Dry roast fenugreek and red chillies in a pan.
  • Allow it to cool down and grind to coarse powder in mixer.
  • Heat oil and temper with mustard, Hing and curry leaves.
  • Add the tempering to chopped mangoes.
  • Add turmeric powder, red chilli powder, salt and 1 tsp of roasted powder and mix.
  • Instant mango pickle is ready.

Notes

Adjust the spice according to your preference
Add more oil if you are planning to keep it for 4-5 days.
