Ingredients
Raw Mango 1 or 1 cup heaped
Salt ¾ tsp
Turmeric powder ½ tsp
Red chilli powder ¾ tsp
Gingely/sesame oil 1-2 tbsp
Mustard 1 tsp
Curry leaves few
Hing ¼ tsp
Roast and grind
Fenugreek 1 tsp
Red chillies 2
Instructions
Chop the mangoes and keep it ready
Dry roast fenugreek and red chillies in a pan.
Allow it to cool down and grind to coarse powder in mixer.
Heat oil and temper with mustard, Hing and curry leaves.
Add the tempering to chopped mangoes.
Add turmeric powder, red chilli powder, salt and 1 tsp of roasted powder and mix.
Instant mango pickle is ready.
Notes
Adjust the spice according to your preference
Add more oil if you are planning to keep it for 4-5 days.
