Kadai Masala Powder Recipe | Kadai Masala

Kadai Masala Powder is a flavorful spice blend used in different Kadai dishes.

Ingredients

  • Coriander seeds 3 tbsp
  • Pepper 3 tsp
  • Fennel 3 tsp
  • Jeera 1.5 tsp
  • Red chilies 15

Instructions

  • Dry roast coriander seeds and pepper in medium flame till aromatic.
  • Then dry roast fennel seeds and jeera till slightly brown.
  • Finally roast the red chili in low flame.
  • Allow everything to cool down.
  • Take all of them in mixer.
  • Grind to coarse powder.
  • Cool down and store in airtight container.
  • Flavorful homemade kadai masala powder is ready.

Notes

Slowly roast the spices without burning.
I used byadagi chillies which is less spicy. Reduce the amount to chili accordingly.
Store in airtight container and use clean spoon to increase the shelf life of the masala.
Grind them coarsely rather than finely.
You can use mortle and pestle and pound them too
