Kadai Mushroom Recipe | How to make Kadai Mushroom

Kadai mushroom is spicy and flavorful mushroom gravy made with freshly grounded kadai masala.

Ingredients

  • Mushroom 400 grams
  • Onion 1 big
  • Tomato 2
  • Capsicum 1
  • Ginger garlic paste 1 tbsp
  • Cashews 10-15
  • Oil 3-4 tbsp
  • Salt as required
  • Kasuri methi 1 tbsp
  • Cream 1 tbsp optional

Kadai masala

  • Coriander seeds 1 tbsp
  • Pepper 1 TSP
  • Fennel 1 TSP
  • Jeera ½ TSP
  • Red chillies 5-6

Instructions

  • Dry roast all the ingredients for kadai masala till aromatic.
  • Cool down and take them in mixer.
  • Grind to fine powder and keep it ready.
  • Wash and chop the mushrooms and dry them.
  • Take tomatoes and cashews in mixer.
  • Grind to smooth paste.
  • Take 1.5 tbsp oil in a wide pan.
  • Add mushrooms to it.
  • Add salt to it and shallow fry them till golden.
  • Remove to the plate and add remaining oil in the same pan.
  • Add finely chopped onions to it and saute till golden.
  • Then add the ginger garlic paste and saute till raw smell goes.
  • Then add tomato cashew paste and saute for 5 minutes.
  • Next add the kadai masala and saute till oil separates.
  • Now add the capsicum
  • Add little water and allow it to boil.
  • Once capsicum is cooked, add the mushrooms and saute till all water is absorbed.
  • Finally add cream and kasuri methi and mix.
  • Garnish with coriander leaves and switch off the flame.

Notes

Shallow frying mushroom is optional. you can skip them.
Adjust the consistency of the gravy by adding more or less water.
You can skip the cream and cashews and make it simple.
Adjust the red chilli according to the type of chilli you use. I use long variety chilli
