Dry roast the ingredients listed for making Kadai masala till aromatic and fragrant.
Cooldown and transfer to mixer.
Grind to a smooth or coarse powder.
Wash and chop the vegetables lengthwise
Take cashews in a mixer and grind to a coarse powder.
Then add tomatoes to cashews
Grind to smooth paste.
Heat 1 tbsp oil and saute the veggies.
Saute them for 5 minutes till it is lightly roasted and crunchy
Remove them from Kadai and add ½ tbsp oil and temper with jeera.
Then add finely chopped onions and saute for 1 minute
Then add ginger garlic paste and saute till raw smell goes
Now add tomato and cashew paste and saute nicely.
Then add the sauteed veggies.
Next, add Kadai masala, give a quick mix.
Now add little water and allow it to boil till veggies are cooked and the masala smell goes.
Then add cream to it and mix.
Finally, add Kasuri methi and coriander leaves.
Yummy and delicious veg Kadai is ready.
