Kadai vegetable is a spicy and flavorful gravy made with assorted vegetables and freshly grounded Kadai masala. It is a typical restaurant-style side dish for roti, phulkas, or naan. It goes well with jeera rice or plain rice too. I served it with Lachha paratha.
Use any vegetables of your choice but capsicum is a must for Kadai gravies. The perfect recipe to make for parties or guests. You can prepare the Kadai masala the previous day and keep it handy to save time. Adjust the consistency of the gravy according to your preference. Kadai Vegetable Recipe | Veg Kadai | How to make Vegetable Kadai
Ingredients
- Carrot 1 medium
- Capsicum 1 big
- Baby corn 2
- Potato 1 medium
- Beetroot 1 small
- Oil 1.5 tbsp
- Jeera ¼ tsp
- Onion 1 big
- Tomato 2 medium or 3 small
- Ginger garlic paste ½ tbsp
- Cashews 6-7
- Kasuri methi 1 tbsp
- Cream 1 tbsp optional
- Coriander leaves to garnish
Kadai masala
- Coriander seeds 1 tbsp
- Pepper 1 tsp
- Jeera 1 tsp
- Fennel seeds 1 tsp
- Red chilli 4
Instructions
- Dry roast the ingredients listed for making Kadai masala till aromatic and fragrant.
- Cooldown and transfer to mixer.
- Grind to a smooth or coarse powder.
- Wash and chop the vegetables lengthwise
- Take cashews in a mixer and grind to a coarse powder.
- Then add tomatoes to cashews
- Grind to smooth paste.
- Heat 1 tbsp oil and saute the veggies.
- Saute them for 5 minutes till it is lightly roasted and crunchy
- Remove them from Kadai and add ½ tbsp oil and temper with jeera.
- Then add finely chopped onions and saute for 1 minute
- Then add ginger garlic paste and saute till raw smell goes
- Now add tomato and cashew paste and saute nicely.
- Then add the sauteed veggies.
- Next, add Kadai masala, give a quick mix.
- Now add little water and allow it to boil till veggies are cooked and the masala smell goes.
- Then add cream to it and mix.
- Finally, add Kasuri methi and coriander leaves.
- Yummy and delicious veg Kadai is ready.

How to make Kadai Vegetable with step by step pictures
