Take cashews in mixer.
Pulse it 3-4 times till it is finely powdered. Don't grind too much as cashews will release oil.
Take sugar and water in a pan.
Allow it to boil till sugar dissolves.
Keep boiling in low flame and check the sugar syrup consistency. It should reach one string consistency. When you take sugar syrup between your index and forefinger it should form one string.
Now add the powdered cashews to it.
Keep stirring in low flame without burning.
Add ghee to it and keep stirring till it comes together.
When you take little dough, you should be able to form balls without sticking.
Switch off the flame.
Immediately transfer to parchment paper or plate coated with ghee.
Keep mixing dough till it is warm enough to handle.
Now knead and form smooth dough.
Place the dough between parchment paper.
Roll them to thin sheet.
Slice them as per your wish.
Store in airtight container.
