Kaju Katli Recipe | How to make Kaju Katli recipe with step by step pictures and instructions. It is one of the classic Indian Sweets made during occasions and festivals. Kaju means cashews and kalti means thin slices. It is also called as Kaju barfi. These melt in mouth kaju katli is so addictive and I am sure you can never stop with one slice. It is easy to prepare in home if you follow the steps correctly.
It requires only three main ingredients cashews, sugar and water. During childhood, Kaju katli is the only sweet I like and eat. Now my daughter is like that and it is must to have during Diwali. This is one of the recipe where you can correct if you miss the consistency too. Make sure you don’t grind cashews too much as it will release oil. Ingredients
- Cashews 2 cups
- Sugar 1 cup
- Water 1/2 cup
- Ghee 1 tsp
- Milk or water 1 tsp for troubleshooting optional
Instructions
- Take cashews in mixer.
- Pulse it 3-4 times till it is finely powdered. Don't grind too much as cashews will release oil.
- Take sugar and water in a pan.
- Allow it to boil till sugar dissolves.
- Keep boiling in low flame and check the sugar syrup consistency. It should reach one string consistency. When you take sugar syrup between your index and forefinger it should form one string.
- Now add the powdered cashews to it.
- Keep stirring in low flame without burning.
- Add ghee to it and keep stirring till it comes together.
- When you take little dough, you should be able to form balls without sticking.
- Switch off the flame.
- Immediately transfer to parchment paper or plate coated with ghee.
- Keep mixing dough till it is warm enough to handle.
- Now knead and form smooth dough.
- Place the dough between parchment paper.
- Roll them to thin sheet.
- Slice them as per your wish.
- Store in airtight container.
- Enjoy the kaju katli
Notes
Don't grind cashews too much as it will release oil.
You can sieve and grind cashews again to make it fine.
If the mixture is too dry, you can add few drops of milk to make the dough smooth.
If the mixture is sticky you can cook for some more time.
You can add some flavorings like cardamom powder or rose essence if you wish.
Ghee is optional but it makes your dough smooth and soft.
I find it easy to roll using parchment paper as it won't stick much. Grease your hands with ghee.
