Kathirikai Murungakkai Mangai Sambar Recipe | Drumstick Brinjal Mango Sambar

Kathirikai murungakkai mangai sambar is delicious south Indian sambar made with drumstick, brinjal and raw mango along with dal and spices.

Ingredients

  • Drumstick 1
  • Brinjal 5
  • Mango ½ slice
  • Small onions 10-15 or Onion 1 medium
  • Tomato 2
  • Red chilli Powder 1.5 tsp
  • Coriander Powder 3 tsp
  • Sambar Powder 2 tsp
  • Tamarind Extract ¼ cup
  • Salt as required
  • Oil ½ tbsp
  • Mustard ¾ tsp
  • Urad dal ½ tsp
  • Curry leaves few
  • Coriander leaves 2 tbsp finely chopped

To cook dal

  • Toor dal ¾ cup
  • Water 2.5 cups
  • Turmeric powder ½ tsp
  • Hing ½ tsp

Instructions

  • Wash toor dal and take in pressure cooker along with water, turmeric powder and hing.
  • Pressure cook for one whistle in medium and 5 minutes in low flame or 3 whistles in medium.
  • Once the pressure releases, open and mash the dal and keep it ready. 
  • Heat oil and temper with mustard, urad dal and curry leaves.
  • Once it browns add finely chopped onions and saute till slightly brown
  • Then add chopped tomatoes and saute till mushy.
  • Then add chopped drumstick and brinjal and saute for 2-3 minutes.
  • Next add salt, red chilli powder, coriander powder and sambar powder.
  • Then add water and allow it to boil. Close with lid and cook till vegetables is cooked.
  • Now add the cooked dal and mix.
  • Next add the chopped mangoes.
  • Allow it to boil for 10 minutes till mangoes is cooked.
  • Finally add tamarind extract and boil for few minutes.
  • Garnish with coriander leaves and switch off the stove.
  • Delicious sambar is ready.

Notes

Small onions taste so good in sambar. So always use them if available
Adjust the tamarind according to the tangy mangoes.
Add water and adjust the consistency as you prefer.
