Kothimbir Vadi Recipe | Maharashtrian Kothimbir Vadi Recipe | How to make Kothimbir Vadi

Kothimbir Vadi is crispy, crunchy and delicious snack from Maharashtra.

Ingredients

  • Besan Flour ½ cup
  • Rice flour 2 tbsp
  • Coriander leaves 1 cup
  • Green chilli 1
  • Garlic 2-3 cloves
  • Ginger chopped 1 tsp
  • Baking soda a pinch
  • Red chilli powder ¼ tsp
  • Coriander powder ¼ tsp
  • Turmeric powder ⅛ tsp
  • Water as required
  • oil for shallow frying

Instructions

  • Clean, wash and dry the coriander leaves to absorb all moisture.
  • Take green chilli, ginger and garlic in mixer.
  • Grind them to coarse paste.
  • Take Besan flour, rice flour, salt, baking soda, red chilli powder, turmeric powder, coriander powder and add green chilli paste.
  • Then add finely chopped coriander leaves and mix.
  • Then sprinkle water and form smooth dough
  • Shape the dough as log and steam for 18-20 minutes till tooth pick inserted comes out clean.
  • Allow it to cool down and slice the pieces.
  • Heat oil in pan and shallow fry the pieces.
  • Flip and cook till it is golden and crisp.
  • Serve Kothimbir Vadi
