Ingredients
Besan Flour ½ cup
Rice flour 2 tbsp
Coriander leaves 1 cup
Green chilli 1
Garlic 2-3 cloves
Ginger chopped 1 tsp
Baking soda a pinch
Red chilli powder ¼ tsp
Coriander powder ¼ tsp
Turmeric powder ⅛ tsp
Water as required
oil for shallow frying
Instructions
Clean, wash and dry the coriander leaves to absorb all moisture.
Take green chilli, ginger and garlic in mixer.
Grind them to coarse paste.
Take Besan flour, rice flour, salt, baking soda, red chilli powder, turmeric powder, coriander powder and add green chilli paste.
Then add finely chopped coriander leaves and mix.
Then sprinkle water and form smooth dough
Shape the dough as log and steam for 18-20 minutes till tooth pick inserted comes out clean.
Allow it to cool down and slice the pieces.
Heat oil in pan and shallow fry the pieces.
Flip and cook till it is golden and crisp.
Serve Kothimbir Vadi
