Kovakkai fry is simple and easy to make side dish which goes well with rice.

Ingredients
Kovakkai 250 grams
Oil 1-2 tbsp
Red chilli powder 1 tsp
Turmeric powder ΒΌ tsp
Salt as required
Instructions
Wash the kovakkai and slice them round or lengthwise.
Heat 1 tbsp oil in a pan.
Add salt, red chilli powder and turmeric powder.
Saute them quickly without burning.
Add the slices kovakkai and saute for 4-5 minutes.
Then add little water to mixture.
Close it with lid and allow it to cook for 10 minutes.
Once cooked, allow it to slow roast till done.
Kovakkai fry is ready.
Notes
I added water to cook faster. You can slowly roast kovakkai in oil itself instead of adding water. Add more oil if required while roastingIt takes some time to cook so make sure it is cooked properly. You can sprinkle some pepper powder, chaat masala in the end.
