Kovakkai fry recipe | Ivy Gourd Stir fry | Tindora Fry recipe with step by step pictures and instructions. It is simple and easy to make side dish which goes well with rice. Kovakkai belongs to gourd family and called as Ivy gourd in English, Dondakaya in Telugu and Tindora in many other places. We mostly make fry with kovakkai or masala where we cook in onion tomato based gravy.

It is one of my favorite vegetables and make atleast once in a week. Kovakkai is slowly roasted with basic spices. This week I am going to share simple everyday lunch menu ideas. You can pair it with sambar or any other gravy. I made Moong dal Karara, Kovakkai fry, pasta salad and bottle gourd basundi for saturday lunch.

  • Turmeric powder 1/4 tsp
  • Salt as required

Instructions

  1. Wash the kovakkai and slice them round or lengthwise.
  2. Heat 1 tbsp oil in a pan.
  3. Add salt, red chilli powder and turmeric powder.
  4. Saute them quickly without burning.
  5. Add the slices kovakkai and saute for 4-5 minutes.

  9. Kovakkai fry is ready.

Notes

I added water to cook faster. You can slowly roast kovakkai in oil itself instead of adding water.

Add more oil if required while roasting

It takes some time to cook so make sure it is cooked properly.

You can sprinkle some pepper powder, chaat masala in the end.
