Lemon poha is one of the quick and easy recipe made with poha/aval/flattened rice.

Ingredients
Poha ½ cup
Lemon 1.medium or 2 tsp juice
Green chilli 1
Turmeric powder ¼ tsp
Salt as required
Oil 1 tsp
Mustard ½ tsp
Urad dal ½ tsp
Chana dal 1 tsp
Curry leaves few
Hing 2 pinch
Peanuts 1 tbsp optional
Instructions
Wash and soak aval in little water till immersed for 2 minutes. squeeze the water and keep it aside.
Heat oil and temper with mustard, urad dal, chana dal, hing and curry leaves.
Once it browns add the finely chopped green chilli, salt and turmeric powder.
Add soaked aval and give a quick saute till combined and switch off the flame.
Now add the lime juice and mix.
Lemon poha is ready.
Notes
I used thin variety of aval so soaked just for 2 minutes. Be careful otherwise it will turn mushy. If you use thick variety of aval you can soak for 5-10 minutes.Adjust the lime juice according to the tanginess you prefer. Skip green chilli and add whole red chillies if you prefer. Peanuts will add nice crunch. This time I didn't have stock so skipped it. But I always prefer to add it.
