Wash and soak the chana dal for 2-3 hours.
Drain the water completely and keep it aside.
Take garlic, fennel and red chilli in a mixer.
Grind it coarsely.
Reserve handful of chana dal and add the remaining dal to mixer.
Pulse it 2-3 times and grind the chana dal mixture coarsely. Add few drops of water if required while grinding.
Transfer to the bowl.
Add salt, reserved chana dal, finely chopped onions, green chilli, curry leaves and coriander leaves to it.
Mix all ingredients well and mixture should be dry and easy to shape.
Take small lemon sized ball and flatten them in your hands.
Heat oil and drop the shaped vada and fry them till golden.
Drain them in tissue and repeat the same for rest of the mixture.
Crispy and crunchy masala vada is ready. Serve them with chutney.
