Masala Vada Recipe | Masal Vadai | Paruppu vadai recipe

Masala Vada is crispy and crunchy tea time snack made with chana dal.

Ingredients

  • Chana dal 1 cup
  • Fennel 1 tsp
  • Garlic 5-6 optional
  • Ginger small piece optional
  • Red chilli 4-5
  • Green chilli 1 optional
  • Onion 1 medium
  • Curry leaves handful
  • Coriander leaves handful
  • Salt as required
  • Oil for deep frying

Instructions

  • Wash and soak the chana dal for 2-3 hours.
  • Drain the water completely and keep it aside.
  • Take garlic, fennel and red chilli in a mixer.
  • Grind it coarsely.
  • Reserve handful of chana dal and add the remaining dal to mixer.
  • Pulse it 2-3 times and grind the chana dal mixture coarsely. Add few drops of water if required while grinding.
  • Transfer to the bowl.
  • Add salt, reserved chana dal, finely chopped onions, green chilli, curry leaves and coriander leaves to it.
  • Mix all ingredients well and mixture should be dry and easy to shape.
  • Take small lemon sized ball and flatten them in your hands.
  • Heat oil and drop the shaped vada and fry them till golden.
  • Drain them in tissue and repeat the same for rest of the mixture.
  • Crispy and crunchy masala vada is ready. Serve them with chutney.

Notes

Mixture should be coarsely grinded to make it crunchy.
There should be much water in the chana dal while grinding. If the mixture is little loose, you can add little rice flour to bring together.
In street side, sometimes they add little rava too.
You can use banana leaf or parchment paper to shape the vada instead of making them in palms.
You can skip onion and garlic and make it as no onion and garlic recipe.
