Millet Idli dosa Recipe | Little Millet Idli Dosa | Samai Idli Dosa

Millet idli dosa is a good alternative to idli/dosa made with rice. This is no rice recipe where I have used only millets and urad dal.

Ingredients

  • Millet 2 cups
  • Urad dal ½ cup
  • Poha ½ cup
  • Fenugreek seeds ½ tsp
  • Ice water for grinding
  • Oil for making dosa

Instructions

  • Take Millet, urad dal, poha, and Fenugreek seeds in a bowl.
  • Wash them 2-3 times and soak for 4-5 hours.
  • Drain the water and take in mixer.
  • Grind them in batches to smooth batter adding little ice water.
  • Transfer to a bowl, add salt and mix.
  • Close it and allow it to ferment for 6-8 hours.
  • Mix the batter gently and fill the idli moulds. I use cloth to make idlis.
  • Heat water in idli pan and once it boils, place the idli plate.
  • Steam for 10-12 minutes in medium flame
  • Sprinkle little water and remove from the cloth.
  • Add little water to the same batter.
  • Heat dosa pan and spread the dosa.
  • Drizzle oil to it
  • Once it is cooked, fold the dosa and remove it from the pan.
  • Crispy dosa is ready.

Notes

Using good quality urad dal and fermentation is very important for soft and fluffy idli.
Use ice water for grinding to reduce the heat while grinding.
I used my mixer to make the batter. You can use grinder too
Same batter can be used of Idli as well as dosa.
Consistency of the batter should be little thick for idli and you can add water for dosa batter.
