Ingredients
Mint leaves ½ cup
Coriander leaves ½ cup
oil 1 tsp
Urad dal 2 tsp
Red chilli 3
Hing 2 pinch
Tamarind ½ tsp tightly packed
Coconut 1 tbsp optional
Instructions
Clean and wash the mint and coriander leaves.
Heat oil and temper with urad dal, red chilli and hing.
Then add washed coriander and mint leaves
Saute for 2 minutes till it shrinks, switch off and add tamarind.
Allow it to cool down and transfer to mixer.
Grind to smooth paste adding little water.
Transfer to bowl or container.
Mint Coriander Thogayal is ready. Serve it with rice/idli/dosa.
Notes
Adjust the proportion of mint and coriander leaves according to availability. You can add few curry leaves too. Adding coconut is optional. This time I skipped it but sometimes will add. You can saute it again in oil to make like thokku which can be refrigerated for sometime.
