Murukku Recipe | How to make Murukku

Murukku is crunchy fried snack which everyone will enjoy it. It is one of the must to have for Diwali.

Ingredients

  • Idly rice 3 cups
  • Urad Dal 1 cup
  • Coconut ½ grated
  • Asafoetida ½ tsp
  • Salt 2 tsp or as required
  • Butter ½ cup or 110 grams
  • Sesame seeds 1 tbsp

Instructions

  • Wash the Idly rice 3-4 times. Soak them for 3-4 hours. Drain water and keep it aside.
  • Take Urad Dal and dry roast them in medium flame till nice smell comes and slightly golden.
  • Cool and grind to smooth powder in mixer. Sieve the flour and keep it ready.
  • Take half of the coconut and scrape the coconut into pieces.
  • Remove the outer black layer and shred it in mixer.
  • To this add the washed rice
  • Add little water and grind to smooth paste like Idly Batter.
  • To the mixture add urad dal powder, asafoetida, salt, sesame seeds and butter and knead to smooth dough.
  • Using murukku aachu of your choice and make it in required shapes. I used my idiyappam plate and spoon to make spiral murukku. It is easy to drop directly in oil.
  • Heat oil in kadai
  • Fry the shaped murukku in hot oil till crisp and drain them in tissue.
  • Cool them completely and store the murukku in air tight container.
  • Add extra butter to dough and make butter murukku.

Notes

I used split urad dal. So took 1 cup heaped. I recommend using whole urad dal for good results.
Murukku was so crisp and breaking easily. we like it this way. You can reduce the butter to 90-100 grams if you want it firm.
You can use green chillies or red chilli powder while grinding to make murukku spicy.
