Take musk melon and remove the seeds, skin and slice them
Take musk melon in blender and puree it till smooth
Take handful of nuts, chop them and keep it ready.
Take ½ cup milk and mix corn flour.
Mix it nicely so there is no lumps formed and keep it aside
Heat the remaining milk in a pan
Allow it to come to boil in low flame and reduce in volume for 20 minutes.
Then add corn flour mix to the milk. Milk will tend to thicken fast after we add corn flour.
Next add Musk melon puree to milk and allow it to boil stirring continuously.
Then add sugar, mix and boil in slow flame till sugar is dissolved.
Stir continuously till it is thick and coats the laddle and milk is reduced in volume.
Taste and add sugar if required. I added extra 2 tbsp sugar.
Switch off the flame, add the finely chopped nuts, cardamom powder and mix.
Then cool it completely and fill the kulfi moulds.
I filled my Popsicle moulds and small kulfi moulds
Poured the remaining mixture to steel tumbler and wrapped with foil.
Refrigerate for 8 hours or overnight till it is set completely.
Before serving keep the mould in water for few secs to remove the kulfi easily. You can use knife and run through the edges too.
