Ingredients

  • Paneer 250 grams
  • Onion 1 big
  • Green chilli 1 big
  • Capsicum 1 medium
  • Tomato 1
  • Ginger garlic paste 1 tbsp
  • Turmeric powder ¼ tsp
  • Red chilli powder 1.5 tsp
  • Cumin powder ¼ tsp
  • Pepper powder ½ tsp
  • Garam masala ½ tsp
  • Coriander leaves 3 tbsp
  • Salt as required
  • Oil 1 tbsp
  • Fennel ½ tsp

Spring roll sheets

  • Maida 2 cups
  • Salt as required
  • Water as required

Instructions

  • Finely chop the onions, green chilli and capsicum and keep it ready.
  • Heat oil in a kadai and add fennel seeds to it.
  • Add finely chopped onions and green chilli and saute for 1 min
  • Then add ginger garlic paste and saute nicely till raw smell goes.
  • Next add finely chopped tomatoes and saute till mushy and add chopped capsicum.
  • Then add salt and all the masala and saute for 5 minutes till capsicum is half cooked.
  • Now add the paneer and mix everything together. Check seasoning and add more salt or spice as required.
  • Add finely chopped coriander leaves and switch off the flame.
  • Paneer capsicum stuffing is ready.
  • Take maida, salt and add water to form thick batter.
  • Heat kadai and spread the batter like mini dosa.
  • Once it is almost cooked just remove from kadai. No need to flip the sheet.
  • Place the filling in the prepared sheet
  • Roll and seal the edges. Heat from the sheet and slight stickiness help to seal the edges.
  • Prepare the rest in similar way and refrigerate the rolls.
  • Heat oil and deep fry them when required.
  • Delicious Paneer Spring Rolls is ready.

Notes

I used homemade paneer from one litre of milk
Adjust the spices according to your preference.
You can keep the prepared rolls in fridge for 4-5 days.
Maida batter should be of medium consistency.
Remove the sheets when it is almost cooked. If you cook it fully it is difficult to seal the edges.
You can preheat the oven and cook for 15-20 mins till crisp if you prefer baking the spring rolls.
