Peanut Sundal Recipe | Verkadalai Sundal | Groundnut Sundal Recipe
Peanut sundal is quick and easy snack recipe made using boiled peanuts.

Ingredients
Groundnuts 300 grams or dry 1 cup
Oil 1 tsp
Mustard ½ tsp
Urad dal ½ tsp
Curry leaves few
Hing 2-3 pinch
Green chilli 1
Red chilli 2
Salt as required
Grated coconut 2 tbsp
Instructions
Soak the fresh groundnuts in water for 30 minutes and wash them to remove all dirt.
Then take them in cooker along with water and pressure cook them for 3-4 whistles.
Drain the water, remove the shells and separate the peanuts.
Heat oil and temper with mustard, urad dal, hing and curry leaves.
Then add finely chopped green chilli and broken red chilli.
Then add boiled peanuts and salt and give a quick stir.
Finally add the grated coconut.
Mix and switch off the flame
Peanut sundal is ready.
Notes
When using dry peanuts soak them for 4 hours or overnight.
Add some grated carrot or mango for variations.
