Pumpkin Paratha Recipe | Yellow Pumpkin Paratha

Pumpkin paratha is a delicious flatbread made with wheat flour, pumpkin, and spices.

Ingredients

  • Wheat flour 2 cups
  • Pumpkin 1 cup chopped
  • Green chilli 1
  • Turmeric powder ½ tsp
  • Garam masala ¼ tsp
  • Cumin powder ½ tsp
  • Ajwain ½ tsp
  • Salt 1 tsp
  • Oil 2 tsp
  • Water as required

Instructions

  • Boil pumpkin with ¾ cup of water till soft.
  • Allow it to cool down and take it in mixer along with green chilli.
  • Grind to smooth paste.
  • Take wheat flour in a bowl.
  • Add pumpkin paste, salt, turmeric powder, cumin powder and ajwain.
  • Mix everything together and add little water to form dough.
  • Now add oil to it and knead
  • Knead nicely for 8-10 minutes till it is smooth and pliable.
  • Cover and keep it aside for 15 minutes.
  • Now take small ball and roll them like chapati sprinkling little flour.
  • Heat kadai and place the rolled paratha. Drizzle oil on the top.
  • Flip them and cook on both sides till golden.
  • Repeat the same for rest of the dough..
  • Serve them hot with raita, curd, pickle or any gravy

Notes

I added spices to balance the sweet taste of pumpkin
Add 1 tsp red chilli powder instead of green chilli
It is stay soft for long time.
