Ingredients

Measurements for making 3 sponge

  • Wheat flour 2 cups
  • Milk 1 ⅓ cup
  • Sugar 1 ¼ cup
  • Vinegar/lime juice 1 tbsp
  • Oil ½ cup
  • Baking powder 1 tsp
  • Baking soda ¾ tsp
  • Vanilla essence 1 tbsp
  • Color few drops

Sugar Syrup

  • Water 1 cup
  • Sugar 2 tbsp

Decoration

  • Colors red, yellow, green, blue, pink few drops
  • Whipped Cream frosting as required
  • Gems for decoration
  • Condensed milk for drizzling
  • Sprinkles as required

Instructions

Making Cake

  • Take wheat flour, baking powder and baking soda in sieve
  • Sieve them for 6-7 times and keep it ready.
  • Take milk in a bowl and add vinegar.
  • Mix it nicely and keep it aside for 5 minutes.
  • In the frothy milk add sugar, oil and vanilla essence and mix it nicely till sugar is dissolved.
  • Add flour in batches and mix
  • Mix nicely without lumps till everything is combined
  • Divide them equally into three parts.
  • Add colors to each part and mix them.
  • Pour one batter in greased tin and tap on the sides.
  • Preheat the oven to 180°C for ten minutes and bake in the same temperature for 35-40 minutes till toothpick inserted comes out clean.
  • Cool them in wire rack.
  • Repeat the same and bake all the layers.

Sugar Syrup

  • Dissolve sugar in water and use as sugar syrup for cakes.

Assembling the cake

  • Make the whipped cream frosting and keep it ready.
  • Take cake board and apply little frosting on the top and place the first layer of cake.
  • Drizzle some sugar syrup on the top and apply the cream.
  • Place the next layer of cake and repeat the same.
  • Repeat the same for all layers and cover it with frosting.
  • Mix different colors in condensed milk and drizzle on the sides of the cake.
  • Decorate with gems on the top and sprinkles on the sides.
  • Colorful Rainbow Cake is ready

Notes

Use any colors of your choice. I used cocoa powder, kesari color, green, blue, yellow and red.
Make sure to cool the cake completely before frosting.
You can prepare and keep the cake in fridge previous day.
Sugar syrup helps to keep the cake moist.
