Ratlami Sev Recipe | How to make Ratlami Sev

Ratlami sev is popular snack from Madhya Pradesh made using besan and spices.

Ingredients

  • Besan flour 2 ½ cup
  • Salt as required
  • Turmeric Powder ¼ tsp
  • Red chilli powder ¼ tsp
  • Hing a pinch
  • Baking soda ¼ tsp
  • Oil 2 tbsp
  • Lime juice 1 tsp
  • Water as required
  • Oil for frying
  • To roast and grind
  • Clove ¾ tsp
  • Fennel seeds ½ tsp
  • Ajwain seeds ¼ tsp
  • Jeera 1 tsp
  • Pepper 1 tsp
  • Cinnamon ½ inch.

Instructions

  • Dry roast the spices given under to roast and grind.
  • Once it cools down, transfer to mixer and grind to powder.
  • Take besan flour in a bowl and add all ingredients except oil. Add spice mix to it and combine.
  • Then add oil and mix it.
  • Then add water and knead to smooth dough.
  • Grease the murukku mold and load the dough.
  • Heat oil and press the sev in hot oil.
  • Allow it to cook till bubbles subsides and drain in kitchen tissue.
  • Repeat the same for rest of the dough.
  • Ratlami Sev is ready
