Ingredients
Besan flour 2 ½ cup
Salt as required
Turmeric Powder ¼ tsp
Red chilli powder ¼ tsp
Hing a pinch
Baking soda ¼ tsp
Oil 2 tbsp
Lime juice 1 tsp
Water as required
Oil for frying
To roast and grind
Clove
¾ tsp
Fennel seeds ½ tsp
Ajwain seeds ¼ tsp
Jeera 1 tsp
Pepper 1 tsp
Cinnamon ½ inch.
Instructions
Dry roast the spices given under to roast and grind.
Once it cools down, transfer to mixer and grind to powder.
Take besan flour in a bowl and add all ingredients except oil. Add spice mix to it and combine.
Then add oil and mix it.
Then add water and knead to smooth dough.
Grease the murukku mold and load the dough.
Heat oil and press the sev in hot oil.
Allow it to cook till bubbles subsides and drain in kitchen tissue.
Repeat the same for rest of the dough.
Ratlami Sev is ready
