Sabudana Vada Recipe | Javvarisi Vada | Sago Vada Recipe

Sabudana vada is crispy and crunchy deep fried fritters made using tapioca pearls, potatoes and peanuts.

Ingredients

  • Sabudana/Tapioca pearls 1 cup
  • Potato 6
  • Peanuts ½ cup
  • Red chilli powder 1 tsp
  • Salt as required
  • Cumin powder ½ tsp
  • Coriander leaves 2 tbsp
  • Lime juice 1 tsp

Instructions

  • Wash and soak sabudana in hot water for 2 hours.
  • It should be soft after soaking. Drain the water and keep it aside.
  • Boil the potatoes for 2-3 whistles.
  • Peel the skin and mash them.
  • Dry roast peanuts till golden.
  • Take them in mixer.
  • Grind to coarse powder.
  • Take all the ingredients in a bowl.
  • Add chopped coriander leaves to it and mix.
  • Shape them in the form of vadai.
  • Heat oil and deep fry them till golden in medium flame.
  • Delicious sabudana vada is ready.

Notes

Soak sabudana properly till soft and drain water completely. Soaking time will vary with different types of sago.
You can use green chilli instead of red chilli powder.
Shallow fry or bake in oven for healthier version
You can add some flour if the batter is too sticky.
