Sabudana vada is crispy and crunchy deep fried fritters made using tapioca pearls, potatoes and peanuts. It is one of the popular snack recipe in Maharashtra. Sabudana vada is most commonly made during fasting. These fritters are crispy outside and soft inside.
Peanuts adds crunchy taste to the vada. Soaking time of sago varies between different types. I usually soak them in hot water to reduce the soaking time. You can soak them overnight and drain the water completely. For healthier version, you can shallow fry them or make using paniyaram pan. Serve it as snacks or starters.
