bloSabudana Vada Recipe | Javvarisi Vada | Sago Vada Recipe with step by step pictures and instructions. Sabudana vada is crispy and crunchy deep fried fritters made using tapioca pearls, potatoes and peanuts. It is one of the popular snack recipe in Maharashtra. Sabudana vada is most commonly made during fasting. These fritters are crispy outside and soft inside.
Peanuts adds crunchy taste to the vada. Soaking time of sago varies between different types. I usually soak them in hot water to reduce the soaking time. You can soak them overnight and drain the water completely. For healthier version, you can shallow fry them or make using paniyaram pan. Serve it as snacks or starters.

Ingredients
- Sabudana/Tapioca pearls 1 cup
- Potato 6
- Peanuts ½ cup
- Red chilli powder 1 tsp
- Salt as required
- Cumin powder ½ tsp
- Coriander leaves 2 tbsp
- Lime juice 1 tsp
Instructions
- Wash and soak sabudana in hot water for 2 hours.
- It should be soft after soaking. Drain the water and keep it aside.
- Boil the potatoes for 2-3 whistles.
- Peel the skin and mash them.
- Dry roast peanuts till golden.
- Take them in mixer.
- Grind to coarse powder.
- Take all the ingredients in a bowl.
- Add chopped coriander leaves to it and mix.
- Shape them in the form of vadai.
- Heat oil and deep fry them till golden in medium flame.
- Delicious sabudana vada is ready.
Notes
How to make Sabudana Vada with step by step pictures
