Schezwan Chicken fried rice recipe | Spicy Chicken Fried Rice Recipe | Schezwan Chicken Rice

Schezwan chicken fried rice is Indo-Chinese dish where rice and chicken are tossed with spicy schezwan sauce

Ingredients

  • Boneless Chicken ½ kg
  • Garlic 5-6 finely chopped
  • Carrot ⅓ cup
  • Cabbage ½ cup
  • Capsicum 1 small
  • Egg 3
  • Schezwan sauce 3 tbsp
  • Pepper powder 2 tsp
  • Salt as required
  • Sugar 1 tsp
  • Oil 2-3 tbsp
  • Spring onions finely chopped to garnish

Marination

  • 1.5 tbsp Ginger garlic paste
  • Red chilli powder 2 tsp
  • Turmeric powder ½ tsp
  • Salt 1 tsp or as required

Cooking Rice

  • Basmati rice 2 cups
  • Salt 1 tsp
  • Oil 2 tsp
  • Water as required

Instructions

Cooking Rice

  • Take two cups rice
  • Wash the rice and soak in water for 30 minutes
  • Boil water in a pan
  • Allow it to boil
  • Once it boils add soaked rice, salt and oil.
  • Cook for 7-10 minutes till it is just cooked.
  • Drain the water and keep the rice aside.

Preparing Chicken

  • Cut the chicken as small pieces. Wash and clean the chicken.
  • Add ginger garlic paste, salt, red chilli powder and turmeric powder.
  • Mix nicely and keep it aside for 10 minutes.
  • In big pan take 2-3 tbsp oil.
  • Shallow fry the chicken in that till it is nicely roasted.
  • Take the chicken and keep it aside.

Preparing Fried Rice

  • In the same oil add he finely chopped garlic. If you want you can add 1-2 tsp of oil.
  • Once it browns add the cabbage, carrot and capsicum.
  • Saute nicely for 3-4 minutes adding salt.
  • Now move the vegetables to one side and crack the eggs.
  • Scramble the eggs nicely.
  • Now add the fried chicken
  • Then add Schezwan sauce and pepper powder. Saute nicely for one minute
  • Now add the cooked rice and mix.
  • Check the seasoning and add salt or pepper please if required
  • Add sugar and mix nicely.
  • Add the spring onions and mix nicely.
  • Schezwan chicken fried rice is ready.
  • Serve hot

Notes

Rice should not be over cooked. So keep an eye after 5 minutes. Time taken will differ between different qualities of rice. Mine got done in 7 minutes.
You can boil the chicken or saute with vegetables and cook instead of shallow frying
Adjust the schezwan sauce according to spiciness required.
