Schezwan Chicken fried rice recipe | Spicy Chicken Fried Rice Recipe | Schezwan Chicken Rice with step by step pictures and instructions. Schezwan chicken fried rice is Indo-Chinese dish where rice and chicken are tossed with spicy schezwan sauce. It is very easy to make in home. I always make homemade schezwan sauce whenever I am planning to make these fried rice. You can use vegetables, paneer, mushroom to make variations. You can adjust the spiciness of the sauce according to your preference.

I always like schezwan fried rice or noodles than normal ones. I like to shallow fry the chicken and use for fried rice than normal boiled chicken. You can boil the chicken and use them or just saute the chicken while making fried rice. You can adjust the sauces and spices according to your preference. We can make these using leftover rice too. You can serve it along with tomato sauce or Manchurian recipes.

Ingredients

  • Boneless Chicken 1/2 kg
  • Garlic 5-6 finely chopped
  • Carrot 1/3 cup
  • Cabbage 1/2 cup
  • Capsicum 1 small
  • Egg 3
  • Schezwan sauce 3 tbsp
  • Pepper powder 2 tsp
  • Salt as required
  • Sugar 1 tsp
  • Oil 2-3 tbsp
  • Spring onions finely chopped to garnish
  • Marination
  • Ginger garlic paste 1.5 tbsp
  • Red chilli powder 2 tsp
  • Turmeric powder 1/2 tsp
  • Salt 1 tsp or as required
  • Cooking Rice
  • Basmati rice 2 cups
  • Salt 1 tsp
  • Oil 2 tsp
  • Water as required

Instructions

    Cooking Rice
  1. Take two cups rice
  2. Wash the rice and soak in water for 30 minutes
  3. Boil water in a pan
  4. Allow it to boil
  5. Once it boils add soaked rice, salt and oil.
  6. Cook for 7-10 minutes till it is just cooked.
  7. Drain the water and keep the rice aside.
  8. Preparing Chicken
  9. Cut the chicken as small pieces. Wash and clean the chicken.
  10. Add ginger garlic paste, salt, red chilli powder and turmeric powder.
  11. Mix nicely and keep it aside for 10 minutes.
  12. In big pan take 2-3 tbsp oil.
  13. Shallow fry the chicken in that till it is nicely roasted.
  14. Take the chicken and keep it aside.
  15. Preparing Fried Rice
  16. In the same oil add he finely chopped garlic. If you want you can add 1-2 tsp of oil.
  17. Once it browns add the cabbage, carrot and capsicum.
  18. Saute nicely for 3-4 minutes adding salt.
  19. Now move the vegetables to one side and crack the eggs.
  20. Scramble the eggs nicely.
  21. Now add the fried chicken
  22. Then add Schezwan sauce and pepper powder. Saute nicely for one minute
  23. Now add the cooked rice and mix.
  24. Check the seasoning and add salt or pepper please if required
  25. Add sugar and mix nicely.
  26. Add the spring onions and mix nicely.
  27. Schezwan chicken fried rice is ready.
  28. Serve hot

Notes

Rice should not be over cooked. So keep an eye after 5 minutes. Time taken will differ between different qualities of rice. Mine got done in 7 minutes.

You can boil the chicken or saute with vegetables and cook instead of shallow frying

Adjust the schezwan sauce according to spiciness required.

Cooking Rice

Take two cups rice

Drain the water and keep the rice aside.

Preparing Chicken

Cut the chicken as small pieces. Wash and clean the chicken.

Add ginger garlic paste, salt, red chilli powder and turmeric powder.

Mix nicely and keep it aside for 10 minutes.

In big pan take 2-3 tbsp oil.

Shallow fry the chicken in that till it is nicely roasted.

Take the chicken and keep it aside.

Preparing Fried Rice

Now move the vegetables to one side and crack the eggs.

Scramble the eggs nicely.

Now add the fried chicken

Then add Schezwan sauce and pepper powder. Saute nicely for one minute
