Spinach Corn Mushroom Lasagna Recipe | Spinach Mushroom with homemade lasagna sheets

Spinach Corn Mushroom lasagna is a creamy and mouthwatering delight made with layers of lasagna sheets sandwiched between creamy white sauce, red sauce, veggies, and loads of cheese

Ingredients

  • Sweet corn 1 cup
  • Spinach 1 cup heaped
  • Onion 1 medium
  • Garlic 7-8
  • Mushroom 7-8
  • Capsicum ½ chopped
  • Carrot 1 medium chopped
  • Akshayakalpa Butter 1 tbsp
  • Pepper powder 1-2 tsp
  • Chilli flakes 1-2 tsp
  • Salt as required

Lasagna sheets

  • Wheat flour 2 cups + extra for dusting
  • Salt ½ tsp
  • Water as required

Assembling

  • Lasagna sheets 10-12
  • Red/Pizza sauce as required
  • White sauce as required
  • Cheese 100 grams

Instructions

Lasagna Sheets

  • Take wheat flour, salt in a bowl.
  • Add water to it and knead to a dough.
  • Knead nicely for 8-10 minutes till smooth and keep it aside for 30 minutes.
  • Dust with flour and roll the dough to thin sheets and cut them as rectangular or square sheets
  • Boil water in a pan.
  • Once it boils, slowly add the sheets and cook for 2-3 minutes.
  • Sheets will get cooked faster so remove them immediately and drain the water. It will break easily so handle it carefully.
  • The lasagna sheet is ready.

Veggies Mixture

  • Boil the sweet corn adding salt till it is cooked
  • Finely chop the other veggies and onions.
  • Heat butter and add finely chopped garlic.
  • Then add onions and saute for 1 minute.
  • Then add carrot, capsicum, and mushroom to it and saute for 4-5 minutes.
  • Next, add chopped spinach to it.
  • Add salt, pepper powder, chilli flakes to it and mix.
  • Finally, add the boiled sweet corn and mix.
  • Vegetable masala is ready.

Assembling

  • Grease the baking pan with butter.
  • Apply some red sauce to it
  • Placed a lasagna sheet on it.
  • Apply red sauce on it.
  • Spread the veggies.
  • Next, add white sauce to it.
  • Sprinkle some cheese on top of it.
  • Then place the lasagna sheet again and repeat the same till you reach the top of the baking pan and cover it with cheese
  • Preheat the air fryer for 3 minutes at 200C
  • Place the baking tin and bake for 15-20 minutes till the cheese melts and it is golden.
  • Spinach corn mushroom lasagna is ready

Notes

You can use any veggies, egg or meat of your choice.
You can use store bought sauces and lasagna sheet if you want to make it quick.
If you don't have oven/Air Fryer you can make it in a pan in stovetop
