Wash and soak the basmati rice for 30 minutes. Drain the water and keep it ready.
Wash the greens spinach, mint and coriander leaves. Take them in mixer. Add green chilli to it.
Grind them to smooth puree adding few drops of water.
Heat ghee and oil. Temper with cinnamon, cardamom, cloves and bay leaf.
Once it browns add the finely chopped onions and saute for few seconds.
Now add ginger garlic paste and saute till raw smell goes.
Then add the spinach puree and allow it to boil.
Then add salt, turmeric powder and garam masala. Saute nicely for 5 mins.
Then add water and allow it to boil.
Once it boils add the washed rice.
Chek for seasoning and close the lid. Pressure cook for 1 whistle and 5 minutes in low flame.
Once the pressure releases open the lid and gently mix the rice.
Yummy and delicious spinach rice is ready.
