Tiffin Sambar recipe | Idly Sambar

Sambar is one of the famous side dish for any tiffin items. Tiffin sambar is prepared from freshly ground masala which give nices aroma and taste

Ingredients

  • Toor dal ¼ cup
  • Moong dal ¼ cup
  • Asafoetida ¼ tsp
  • Salt 1 tsp or as required
  • Green chilli 2
  • Onion 1
  • Tomato 1
  • Turmeric powder ½ tsp
  • Tamarind extract ½ cup
  • Jaggery 1 tsp
  • Ghee 2 tsp optional
  • Coriander leaves to garnish

To roast and grind

  • Coriander seeds 1 tbsp
  • Channa dal 1 tbsp
  • Red chilli 4
  • Jeera ½ tsp
  • Pepper ¼ tsp
  • Fenugreek seeds ½ tsp

To temper

  • Oil 2 tsp
  • Mustard ½ tsp
  • Urad dal ½ tsp
  • Curry leaves few

Instructions

  • Cook the dal with turmeric powder and asafoetida for one whistle and simmer for 5 minutes. Mash the dal and keep it aside
  • Dry roast the ingredients given under roast and roast till nice aroma comes. Cool it and transfer to mixer and grind to powder.
  • Heat oil and temper with mustard, urad dal and curry leaves.
  • Once it sputters, add the onions and slit green chillies and saute for 2-3 minutes.
  • Then add the tomatoes and saute till it is mushy.
  • You can add vegetables if you are adding at this stage and allow it to cook before adding tamarind extract.
  • Then add the tamarind extract, salt and little water and allow it to boil for 2 minutes.
  • Now add the cooked dal and spice powder.
  • Add water as mixture will tend to thicken and allow it to boil nicely.
  • Once it boils, add the jaggery powder and ghee and allow it to boil for few seconds.
  • Garnish with coriander leaves and serve.

Notes

My mom always use small onions for sambar. I don't get it easily here so used normal onions.
You can add vegetables of your choice like carrot, beans, brinjal, potato.
Adjust the water according to consistency you require.
Sambar gets to thicken after sometime
