Soak basmati rice for 30 minutes. Wash and drain the water and keep it ready.
Slice the onions, gomato, green chillies and prepare the ginger garlic paste.
Heat oil, ghee and temper with whole spices given under to temper.
Once it browns add the sliced onions and green chillies
Then add ginger garlic paste and saute till raw smell goes
Then add the chopped tomatoes and saute for 5 minutes.
Now add the mint leaves and coriander leaves saute.
Then add curd to it.
Next add red chilli powder, turmeric powder, garam masala, coriander powder, cumin powder and salt.
Saute nicely till tomatoes are mushy and then add water.
When the water boils, add the rice and check the seasoning.
Close the pressure cook and cook in medium flame for one whistle and slow flame for 5 minutes.
Wait for the pressure to settle down and open the lid. Gently mix it up.
Tomato rice is ready. Serve it with simple raita.
