Dry roast the rava till golden. Skip this step if you use roasted rava.
Heat oil and temper with mustard, urad dal, chana dal, cumin seeds, and curry leaves.
Once it splutters, add finely chopped onions and slit green chilli.
Saute nicely and add salt.
Then add the required water and allow it to boil.
Once it boils, add the roasted rava slowly and mixing continuously. keep the flame in low while doing this to avoid forming lumps.
Mix it continuously till all water is absorbed.
Add ghee at this stage.
Give a quick stir and switch off the flame.
Piping hot rava upma is ready. Serve it with coconut chutney/sambar.
