Vazhakkai Bajji Recipe| Raw Banana Bajji | How to make Bajji

Vazhakkai Bajji is crispy fritters made using Besan, corn/rice flour with spices and raw banana

Ingredients

  • Besan flour 2 cup
  • Corn flour ⅓ cup
  • Rice flour ⅓ cup
  • Ginger garlic paste 2 tsp optional
  • Red Chilli powder 2 tsp
  • Baking soda ½ tsp
  • Hing ¼ tsp
  • Salt as required
  • Kesari Color 2 pinch optional
  • Water 2 cups or as required
  • Oil for deep frying

Instructions

  • Take besan, rice and corn flour in a bowl
  • Add salt, red chilli powder, ginger garlic paste, hing and baking soda
  • Add water little by little and mix to form batter.
  • Batter should be smooth without any lumps
  • Consistency of the batter should be neither too thin nor too thick
  • Add pinch of food color if you are using.
  • Mix and form the batter.
  • Peel the skin of raw banana and slice them thin and keep it ready
  • Dip the sliced vazhakkai in batter and drop them in hot oil
  • Fry them till golden flipping in between.
  • Drain them in tissue
  • Enjoy with cup of hot Tea

Notes

Many don't use ginger garlic paste. But my mom always uses them while making bajji and we like it. You can skip it
Baking soda gives soft, fluffy bajji
If the batter is too thin it will not coat the bajji and if it is too thick bajji will be hard. So adjust accordingly. if your batter becomes thin, you can add little besan flour and adjust.
You can use only rice flour or corn flour or mix of both
