Instructions
Wash and take rice and moong dal in a pressure cooker.
Add water and salt to it.
Pressure cook for 1 whistle and 10 minutes in low flame or 4 whistles whichever is faster.
Once pressure releases open the cooker and mash them.
Now heat ghee and temper with cumin seeds, pepper powder, hing, ginger, green chilli, cashews, and curry leaves.
Add it to Pongal and mix it. Check the seasoning and adjust it.
Serve hot Pongal with sambar and chutney.
Notes
Raw rice especially Sona Masuri rice is best for making Pongal. Water quantity depends on the type of rice used. If the mixture is too thick you can add some hot water and adjust the consistency. If you use oil, the consistency of the Pongal will remain the same for a longer duration. I always use pepper powder instead of whole pepper as kids will pick it. Drizzle extra ghee on the top when serving guests.
