Warm ¾ cup milk for 30-40 seconds in microwave.
Add honey and yeast to it
Mix it nicely and keep it aside for 10-15 minutes.
In the meantime we can prepare the masala.
Heat oil and temper with cumin seeds
Once it browns add the crushed garlic and green chillies.
Saute for few seconds and add the onions.
Saute nicely for 2-3 minutes till it shrinks little.
Now add red chilli flakes, oregano, salt and pepper powder.
Mix it nicely and saute for 2-3 minutes.
Garnish with finely chopped coriander leaves and switch off the flame.
Allow it to cool down
Now yeast mixture should be frothy. It shows yeast is active and we can proceed. If it is not frothy you can discard and use new one. There can be few reasons for yeast to be inactive. Yeast is very old and reaching expiry date. Quality of yeast is not good. If you add yeast to very hot water it will kill the yeast. Proofing of yeast is very important for any bread recipes. if the yeast is not active don't proceed further.
Take flour, salt and milk powder in a bowl and mix it nicely.
Add onion mixture, yeast mixture and mix to form dough.
Now add oil and knead for 10-12 minutes till it is smooth and soft.
Cover and allow it to rise till it doubles in size
It will take between 1-2 hours. Mine got doubled in 1.5 hours.
Punch the dough and knead for one minute.
Grease the hands with oil and form lemon size balls
Arrange them in baking tray lined with parchment paper
Allow it to rise for 20-30 minutes till it increases size.
Sprinkle some sesame seeds on the top
Preheat the oven at 160°C for ten minutes and bake in same temperature in 20-25 minutes till it browns. Brush it with little butter/oil
Serve the savory buns hot with cup of coffee/Tea.
