Navrathri Sundal Varieties | Navrathri Sundal Recipes. Navaratri is a Hindu festival that spans nine nights (and ten days) and is celebrated every year in the autumn. In South India, Golu is kept on these nine days and every day neighbors will be visiting and we offer some sundal/prasadam to God. Different varieties of sweet and savory sundal, variety rice is made as neivedhyam to offer God each day. We use variety of legumes and dals to make the sundal. This post will cover the different sundal varieties which we can make for the festival. I will add the individual link as and when I add them.
Most of the sundal needs to be soaked overnight and pressure cooked for 3-4 whistles. So plan ahead with the menu. This post includes 10 varieties of Sundal which will help in your menu planning. Make big batch of Sundal Podi and keep it ready. It will save lot of time while making the savory sundal varieties each day. I have included the general recipe of making sweet and savory sundal in this post.

How to make spicy savory sundal
- Soak the legumes/dal overnight.
- Pressure cook them for 3-4 whistles adding little salt(this is vary depending on the type of legumes) Check out the individual links for the information.
- Heat oil and temper with mustard, red chilli, hing and curry leaves
- Add the cooked sundal to it.
- Temper with sundal podi and grated coconut.
- Spicy sundal is ready.
How to make sweet sundal
- Soak the legumes/dal overnight.
- Cook them as required.
- Add sugar/jaggery powder, cardamom powder and grated coconut to it and mix.
- Sweet sundal is ready.
Notes
- Soaking time will vary for each type of legumes.
- Check out the individual recipe links to find out the soaking time and process for each type of sundal.
- Sundal should be cooked just right without being mushy.
- Instead of sundal podi, you can use green chilli or sambar powder and make spicy sundal too
