Kesar Badam Kulfi Recipe | Badam Kulfi recipe with step by step pictures and instructions. Kesar Badam Kulfi is delicious dessert made with milk, sugar, badam and saffron. Flavor of badam and saffron makes it more rich. Grind badam to smooth puree and add to milk. You can always add finely chopped badam too. My kids will pick them so didn’t add chopped nuts.
My love for kulfi never ends and I already shared the basic kulfi, muskmelon kulfi and mango kulfi recipes. I love kulfi more than ice cream and would try different flavors each time. I followed the traditional method of preparing kulfi using only milk which is easily available in all kitchens. It needs more time as we simmer milk and allow it to reduce to 1/3rd of its volume. Ingredients
- Milk 6 cups
- Badam 3/4 cup
- Sugar 3/4 cup
- Cardamom 4
- Saffron 10-12 strands
Instructions
- Soak the badam in hot water for 30 minutes.
- Peel the skin of the badam and take in mixer.
- Add 1 cup of milk to it and grind to fine paste.
- Boil milk in a pan.
- Allow it to boil in low or medium flame till it reduces to 1/2 of its volume. Keep stirring often.
- Then add badam puree to it and stir without forming lumps.
- Then add sugar to it and allow it to boil till it is thick and creamy.
- Finally add saffron and crushed cardamom to it and mix.
- Allow it to cool down completely.
- Fill the kulfi moulds and refrigerate for 8 hours or overnight till it is set completely.
- Before serving keep the mould in water for few secs to remove the kulfi easily. You can use knife and run through the edges too.
- Enjoy the yummy kesar badam kulfi.
Notes
Once it cools down, you can taste and add sugar if required.
Always use full fat milk to make creamy kulfi.
You can add some condensed milk and reduce the sugar.
You can grind them coarsely too. I grind to fine paste otherwise my kids will pick it.
You can use normal stainless steel glass if you don't have kulfi mould. In that case cover the top with silver foil
You can remove the kulfi from fridge after two hours and insert icecream stick if you are using stainless steel glass.
